The 2026 festival keeps the familiar $40 brunch and lunch menus and the $50 or $65 dinners, but adds a new Reserve tier starting at $95. That ceiling is not arbitrary. It is priced against the rooms opening around it.

A resident who has already lived through two or three Spice seasons on Brickell Avenue knows the mechanics. What is different in 2026 is the surrounding table. Amazónico has already landed. A caviar-in-every-course room from the Ducasse consulting arm is open at 1060 Brickell. Seia is coming to the 54th floor of 830 Brickell later this year. The Spice menu you book in July is less about the deal and more about which kitchens you want to know before those reservations disappear.

What the Reserve Tier Actually Signals

The prior Spice logic was straightforward. A resident used $40 lunches to sample rooms they would not otherwise justify on a weekday, and saved the $65 dinner for a room they wanted to revisit at scale. The 2026 addition changes that math. A Reserve seat begins at $95 and, in at least one confirmed room, comes with Champagne on arrival, shared starters, and a choice of prestige proteins.

At Nusr-Et, the daily $40 lunch runs a generous appetizer and entrée selection while dinner steps to $65, and the Reserve menu includes a welcome glass of Champagne, shared starters such as steak tartare or beef carpaccio, and a choice of filet mignon, New York strip, or butter-poached lobster. Reading that against the à la carte reality of the same room, the Reserve tier is not a Spice discount at all. It is a curated tasting priced to compete with what a new opening would charge a walk-in for the same dish count.

Hutong runs the widest Spice window on the block. Known for artisanal dim sum and Peking duck, the room offers a $40 weekday lunch and a $65 dinner every day, with lunch service best enjoyed on the terrace and dishes such as the steamed pork bao at the start and Kung Pao chicken or Ma La chili prawns as entrées. Daily availability across both tiers is unusual, and it makes Hutong the room to schedule when a Wednesday client lunch surfaces late.

Claudie, the Riviera-styled room with a terrace and a dining room, is the one to hold for a slower midweek meal. The concept channels the French Riviera across a lush, garden-style terrace and a sophisticated dining room, with a $40 weekday lunch and a $65 dinner available Sunday through Thursday. That Sunday-through-Thursday dinner window is the tell. It is a room built for the calendar residents actually use, not the tourist-heavy weekend.

The $65 Dinner Is a Different Calculation

Where the $40 tier rewards the resident who already knows the room, the $65 tier tests whether a Brickell restaurant can deliver a full evening at a price fixed in advance. Three menus this summer are worth the reading.

Tea Room, also inside EAST, is the counterpoint to Quinto. Trading the open-air rooftop for a Hong Kong-inspired speakeasy with equally impressive city views, it offers a $65 dinner Wednesday through Sunday, opening with hamachi tiradito and moving to crab rangoon lamb chops with Balinese rice and cilantro crema, then closing with mochi ice cream or bananas foster. The room reads as a considered evening, not a value play.

Delilah is the other end of the register. The sleek but unstuffy supper club runs comforting American classics alongside truffle-piled dishes, sits waterfront in Brickell with a festive after-dark atmosphere, and offers a $65 dinner Tuesday through Saturday under massive chandeliers, with entrées from a classic burger on a potato bun to branzino with olive tapenade, fennel, and fava beans, and Kendall's Slutty Brownie for dessert. That is a menu that reads as full price contained inside a Spice price.

Nusr-Et sits in a category of its own for reasons already covered. What matters for the resident is that the $65 dinner offers wagyu cuts across the board, which is a rare Spice proposition anywhere in the corridor.

What's Opening Around These Reservations

The reason Spice 2026 feels different is that it overlaps with an unusually active opening cycle inside a few blocks of the same restaurants.

Amazónico has officially landed in Brickell after originating in Madrid, transforming a corner of the neighborhood into an immersive rainforest-inspired room with lush interiors, live entertainment, sushi, premium steaks, seafood, and Latin American flavors, and has quickly become one of the city's most sought-after reservations. A resident booking Spice this summer should hold at least one weeknight for Amazónico to read its opening state before the reservation math tightens further.

The Ducasse-consulted caviar concept at 1060 Brickell is a stricter test. Created by Paris-based Ducasse Conseil, the room puts caviar in every dish with at least 10 grams per course and 20 grams on mains and pastas, and is led by Spanish-born chef Carlos Consuegra Graino, who has worked under Daniel Boulud and José Andrés, with tasting menus running from a five-course meal with 40 grams of Ossetra at $160 per person to a seven-course meal with 50 grams at $205. Read against the Reserve tier's $95 floor, this is what the market is telling Spice rooms they now need to earn back.

Bar Fideo delivers a fresh take on Mediterranean and Spanish-inspired cuisine with handmade noodles, seasonal small plates, thoughtfully curated wines, and an intimate atmosphere, one of Brickell's newest hidden gems for those looking to escape the neighborhood's larger dining destinations. It is the summer's quiet counterweight to the maximalist openings.

The most useful Spice booking in Brickell this July is not the room with the deepest discount. It is the room that will be hardest to reach in December.

Two more arrivals to track. Carrot Express is opening a second Brickell location this fall at 1057 Brickell Plaza, a 1,362-square-foot fast-casual space with seating for 52 including 32 indoor seats and a 20-seat outdoor patio. And on the pastry end, PopUp Bagels is bringing its cult-favorite bagels and loaded schmears to Miami with locations in Aventura and Brickell, turning a once-temporary pop-up into permanent neighborhood fixtures. Neither is a Spice room. Both change the daily rhythm around the ones that are.

The Fall Booking Window Is Already Priced In

The reason the Reserve tier arrived in 2026, and not in 2025 or 2024, is legible on the skyline. Seia, a contemporary Italian restaurant and private members' club from OKO Group and the Bastion Collection, will open atop 830 Brickell on the 54th and 55th floors of the 55-story tower, with a 178-seat public restaurant offering sweeping views of the city and Biscayne Bay and a 180-degree terrace, from the same culinary team behind L'Atelier de Joël Robuchon and Le Jardinier. When a room of that pedigree is coming to the corridor, existing Spice rooms rewrite their promotion.

Add the demand context. Greater Miami drew 28.3 million visitors in 2025, and FIFA World Cup 26 will bring the world's biggest sporting event to Hard Rock Stadium, with world-class matches drawing fans from around the globe. That is the reservation pressure a resident is booking against this summer.

A Sequence That Respects the Calendar

For a Brickell homeowner planning six to eight tables between now and Labor Day, the sequence that pays out best looks like this:

  1. Two $40 lunches early in the season at Quinto and Hutong to lock the workday tables.
  2. One $65 Sunday-through-Thursday dinner at Claudie to test the room at slow tempo.
  3. One weeknight walk-in at Bar Fideo or Amazónico, not on a Spice menu, to read the new arrivals at full price.
  4. One $65 Tea Room dinner mid-August, when service is settled and the room has quieted from July openings.
  5. One Reserve booking at Nusr-Et or Delilah in the final week of August, when the tier is trying hardest to prove itself.
